This is because these drinks are made from plants, and plants produce a variety of different chemicals to protect themselves against various micro-organisms. When we drink the infusions of these plants, we benefit from having the same chemicals in our system as well. These chemicals include essential nutrients like Vitamin C (which is in small amounts in green tea, but not black tea), as well as more specialized chemicals specific to only certain types of plants.
